  foods.\nAbstract: Food processing enables the products to be available fo
 r\nconsumers around the world independently of seasonal changes. Some\nthe
 rmal processes of food make it possible to produce\nmicrobiological safe p
 roducts with higher quality. In order to\nobtain the desired safety and qu
 ality levels it is important to\nstudy the product characteristics\, proce
 ss conditions and their\ninteractions. As compared to conventional methods
 \, new\ntechnologies\, like microwave heating\, have also been applied to
 \nfood thermal processing. This presentation will deal with the\naspects c
 ited above related to microwave assisted thermal\nprocessing of fluid food
 s. She will discuss the idea of her PhD\nthesis project\, the experiments 
 done and the experience at 9IÖÆ×÷³§Ãâ·Ñ\nUniversity.\n\nValquiria Ros Polski was
  born in Brazil (Guarulhos – SP) and did\nher undergraduate studies in Foo
 d Engineering at UNICAMP (State\nUniversity of Campinas) in São Paulo stat
 e from 2001 to 2005.\nPresently she is a PhD graduate student in Food Engi
 neering at the\nsame University. The research project is developed at ITAL
  (Food\nResearch Institute) in Campinas – SP\, where she has been working 
 as\na research trainee since 2001. Valquiria spent the past 7 months at\nD
 epartment of Bioresource Engineering\, 9IÖÆ×÷³§Ãâ·Ñ as a\nGraduate Re
 search Trainee working on microwave thermal processing\nunder the supervis
